Oxford Beef is a small-batch beef operation nestled in the rolling hills of Llano, Texas — deep in the Texas Hill Country. We raise a carefully managed herd on 100 acres of open pasture, the way cattle were meant to be raised: with time, space, and attention.
Every animal at Oxford Beef is sired by a 100% Wagyu bull — the breed prized worldwide for exceptional intramuscular fat marbling, rich buttery flavor, and a tenderness that speaks for itself. Our bulls cross with Akaushi (Japanese Red Wagyu) and Angus cows, producing offspring that carry Wagyu's hallmark marbling alongside the proven hardiness and flavor profile of Akaushi and Angus bloodlines.
The result is beef with outstanding marbling and deep, complex flavor — at a more accessible price point than fullblood Wagyu, and with a character that's unmistakably Texas.
We raise just enough — never more. Every animal gets the time it needs: a full 2.5-year cycle on open pasture before harvest. That's roughly twice as long as commodity beef. We believe the flavor is in the time, and we're not in a rush.

We're based in Llano, Texas — a small town at the heart of the Texas Hill Country, known for granite outcroppings, clear rivers, and a deep ranching tradition. Our cattle graze on 100 acres of leased pasture land, well-suited to the Hill Country climate and terrain.
Oxford Beef is currently available for local pickup in the Llano area. We're a real ranch operation — not a storefront — so we arrange pickups directly with our customers.
